Winemaking
Produced in the prestigious Languedoc protected designation of origin, La réserve d'O Bilbo represents the excellence and richness of one of France's most important wine regions. In its harmonious and balanced composition, Grenache plays the leading role (40%), accompanied by the complexity of Syrah (30%) and the freshness of Cinsault (30%).
Grown in stony clay-limestone soils at an altitude of 400 metres, this wine expresses a mineral character and an elegance that reflects the purity of its terroir. Committed to biodynamic agriculture and manual harvesting, this wine is a reflection of dedication and respect for the land.
The production of La réserve d'O Bilbo follows a meticulous process. It uses indigenous yeasts and a maceration of 20 days, following a traditional vinification without the use of additives. This approach guarantees its purity and authenticity. Aged in concrete and stainless steel tanks for 8 months, this process ensures that the wine develops its character while maintaining its freshness and vivacity.
With moderate use of added sulphites at bottling, this wine is presented in its most natural and honest form. In addition, it is certified as an organic wine by ECOCERT and DEMETER, guaranteeing its production under the highest standards of quality and sustainability.
