The 2017 Syrah en Cerise begins a little more broad-shouldered than the rest of the range, offering up aromas of black cherries, crushed rock, cured meats, smoked peppercorn and dusty lavender in the glass. Full-bodied, the wine is firm with youthful tannins, which make this bottling food-friendly. Open-knit and expressive, the long, winding finish evolves over a few moments before reverting to savory tones and an expression of dust-covered cherry skin. Only 393 cases were produced. I would suggest giving this one more year in the cellar, then consume over the next 13-18 years.

Description
Cayuse En Cerise Syrah comesfrom the Cayuse Vineyards winery, located in the Walla Walla Valley, Washington. It is a biodynamic, wood-aged red wine made exclusively from 100% Syrah. The project behind this wine is the work of the young French-born winemaker Christophe Baron. After discovering the stony terroirs of the Walla Walla Valley and their similarity to those of the French region of Chateauneuf du Pape, he decided to make stellar French-style wines.
The name "En Cerise" comes from a vineyard where cherry trees were once planted, and "cerise" means "cherry" in French. This 4 hectare vineyard was planted in 1998 on stony soils and is worked without the use of chemicals. Cayuse Vineyards has the honour of being Washington's first biodynamic winery, where soil, plants and animals live together in a closed, self-feeding ecosystem.
Winemaking
The grapes are harvested according to the astronomical calendar and, once in the winery, the grapes are selected and fermented with indigenous yeasts at a controlled temperature. Subsequently, the wine is aged for 18 months in French oak barrels (20% new).
Taste
Cayuse En Cerise Syrah is an impressive display of what the Syrah variety has to offer. This wine presents notes of plum, Spanish olives, smoked meat and dried white grapefruit zest that combine perfectly on the palate. There is also a phenomenal stony minerality that is always present in these wines. The tannins are silky and fuse well with the almost perfect levels of acidity.
