Description
David & Goliath is a handcrafted creation, made without following pre-established formulas, only with passion and dedication to traditional viticulture. This single varietal wine is made from 100% Bobal, a grape native to the region of Valencia. The grapes come from old vineyards over 60 years old, located at an altitude of 900 metres above sea level. These vineyards, planted on clay soils that retain water well, give the grapes their distinctive characteristics, enhancing their aromatic expression and structure.
Winemaking
The grapes are harvested by hand in small boxes to avoid crushing and to ensure that they arrive at the winery in optimum condition. After manual selection, the vinification process follows a special technique: the Roman method is used, an ancestral technique that has been recovered to maximise the purity and authenticity of the wine. The wine then undergoes an integral fermentation, a process in which fermentation and ageing in French and American oak barrels for 12 months take place simultaneously . This method is unusual and requires great oenological skill, but it gives the wine a unique complexity.
Moreover, David & Goliath is made without the addition of any chemicals, sulphites or fining agents, respecting the nature of the grapes as much as possible. The result is a pure wine that reflects the true essence of the Bobal grape and the Valencian terroir.
Taste
On the nose, David & Goliath is an explosion of ripe black fruit aromas, such as blackberries and plums, accompanied by balsamic and spicy notes that give it a touch of sophistication. On the palate, it is round, smooth and with a balanced acidity that harmonises perfectly with the fruit flavours. There are also notes of chocolate, liquorice and light toasted hints from the wood. The finish is long and persistent, leaving a pleasant sensation that invites you to continue tasting it. It is advisable to decant it between 30 and 45 minutes before serving to better appreciate its complexity.
