Description
Matsu El Viejo is a wine that reflects the tradition and dedication of the centuries-old vineyards of the Toro region. This wine is made from 100% Tinta de Toro, a native grape variety grown in sandy soils with a high granitic stony component. The vineyards selected to produce this wine have an extremely limited production, which guarantees exceptional quality.
Winemaking
The winemaking process of Matsu El Viejo is meticulous and respectful of nature. The grapes are harvested by hand between the end of September and mid-October. Maceration lasts 14 days, followed by spontaneous fermentation in concrete tanks with indigenous yeasts. The wine is aged for 16 months in new French oak barrels, which gives it a distinctive complexity and elegance.
Taste
In terms of taste, Matsu El Viejo has a very complex and attractive organoleptic profile. Visually, it is distinguished by its deep cherry red colour with violet notes on the rim, showing a high and dense robe. On the nose, it stands out for its medium intensity but rich in nuances, with an elegant compendium of ripe black fruit aromas, creamy and sweet nuances from the barrel, and subtle spicy notes that give it a unique character.
On the palate, Matsu El Viejo is very pleasant, with an outstanding smoothness, fullness and voluptuousness throughout. The complexity is also evident on the palate, with excellent ripeness that is the result of the low yields of the old vines. The wine offers perfect balance, with very ripe tannins and a long, lingering finish. This wine is ideal for pairing with red meats, offering a pleasant and memorable dining experience.
