Description
Maxim Lannay Chava Chavient is an aged white wine made from Chardonnay and Savagnin grapes in the Jura region by the Maxim Lannay winery in France.
The grapes come from soils with loamy and limestone soils, with a temperate climate with oceanic and continental variations in the Burgundy region.
This vineyard has been cultivated using conventional viticulture techniques with centuries-old know-how.
Winemaking
The grapes are harvested by hand. Vinification is carried out in the winery after direct pressing of the grapes. Maceration is carried out for two months. The grapes are fermented very slowly with indigenous yeasts and without temperature control.
The wine is aged for 24 months in used French oak barrels. The resulting wine is bottled without filtering, fining or sulphiting.

Maxim Lannay Chava Chavient is a wine with fruity and floral aromas. On the palate it is balanced with a round texture, transcendent minerality and an acidity that gives it qualities for ageing. It is a wine that is full, energetic and delicate at the same time, a wine that delights the palate!

Chava Chavient was created by Maxim Lannay who, together with his partner Isabelle Delahaye, works in the vineyard and in the cellar, in harmony with nature.
This wine has been made from two very special varieties often used to produce regional white wine.
Maxim Lannay Chava Chavient is also an expression of the place where the grape that gave birth to it is born and perpetuates the know-how.
In gastronomic terms, it is perfect for dinners with friends and the ideal accompaniment to creamy cheeses, poultry and dishes such as risotto with candied lemons.
