The NV Crémant du Jura Extra Brut Blanc de Blancs BBF (2016-2017 base) was bottled in 2018 and disgorged in 2022. It is pure Chardonnay, 50% from clay and 50% from limestone and in a proportion of 70% wine from 2016 and the rest from 2017. This matured in barrel and went through malolactic. It's more floral, with more finesse, more in the style of a Champagne with the vine de reserve aged in barrel. It's more mineral, more chalky and saltier, tastier. And it has less bottle age than the other wine I tasted next to it that was disgorged in 2019...

Description
Tissot Crémant du Jura BBF is a biodynamic sparkling wine made in the Jura region of France by Stéphane Tissot. This wine is a Blanc de Blancs, made exclusively from Chardonnay grapes. The vines are grown on clay (60%) and limestone (40%) soils, and are on average 25 years old.
Winemaking
The grapes are harvested by hand, ensuring the maximum quality of the grapes. The vinification process includes ageing in oak barrels for 14 months for part of the wine, while the rest is aged in tanks for 3 months. The wine is then bottled and aged on the lees for a minimum of 48 months, after which it is freshly disgorged. This crémant is not dosaged and is classified as Brut Nature.
Stéphane Tissot's biodynamic approach ensures that the vines are cultivated without the use of herbicides, chemical fertilisers or synthetic products. Instead, natural treatments such as sulphur, copper and plant tisanes are used, as well as compost produced on the estate itself. This method of cultivation reflects a deep respect for the environment and the biodiversity of the vineyard, contributing to the authenticity and purity of the wine.
