Description
The red wine Cascina Tavijn Ruschena produced by Nadia Verrua in the wine region of Piedmont, Italy, is made from grapes of the Ruché variety, and what makes it even more special is that it is the only wine from Cascina Tavijn that is produced from grapes obtained from neighbours, namely from a family called Ruschena. The vines are more than 70 years old and are located on a small plot in the village of Frassinello. Here the soils are calcareous and are cultivated according to organic practices.
Winemaking
After harvesting by hand, the grapes are destemmed, always trying to keep the berries intact. The grapes are gently crushed without breaking the skins, and then fermented with indigenous yeasts in stainless steel tanks and maceration of the skins for the next 2 months. The wine rests in tanks for about a year before being bottled unfiltered, unclarified and without added sulphites.
Taste
When you open a bottle of wine, the first thing you notice is a subtle hint of horse sweat, which quickly disappears to give way to herbaceous aromas. On the palate, it is savoury with a long finish. The flavours evolve from baked plum to tobacco. Although not a complex wine, it is extremely delicious, being described by some as a "plum tart in a glass".
