Skin contact for 10 days. Fermented with indigenous yeasts in stainless steel tanks for 5 months. Bottled with addition of grape must and natural fermentation in bottle for 3 months before disgorgement. Bottled without fining, filtration or added SO2.
Description
The Costadilà Móz wine is a sparkling col fondo made from the white varieties Moscato Fior d'Arancio and Glera. The Moscato Fior d'Arancio comes from the vineyards of Villa dei Vescovi di Torreglia, located in the Euganei hills. These vineyards have an average age of 30 years and a characteristic volcanic soil.
Winemaking
It starts with a direct pressing of the Glera, followed by a spontaneous fermentation. Moscato Fior d'Arancio is macerated with its skins for 30 days in stainless steel tanks, and then bottled with must for re-fermentation in bottle.
Taste
Costadilà Móz has an intense straw yellow colour and tiny bubbles. Its aroma is captivating, with a rich palette of fruity nuances and a final touch reminiscent of baking. On the palate, it is dry, fresh and fragrant, with a savoury, mineral finish. A slightly bitter, but well-integrated note accompanies the finish, making this wine a bold taste experience. It is an extremely easy-drinking wine and its aromatic notes make it the undisputed star of any aperitif. It is also a perfect accompaniment to fish and shellfish, especially oysters and mussels.
