Disgorged in July 2019 with six grams per liter dosage, the latest rendition of Gimonnet's NV Brut Blanc de Blancs Premier Cru Cuis is based on the 2016 vintage, complemented by some 30% reserve wines matured in magnum. Offering up aromas of citrus oil, fresh peach, clear honey, white flowers and oyster shell, it's medium to full-bodied, pillowy and elegantly fleshy, with crisp acids, elegant mousse and chalky back-end grip. Amounting to some 130,000 bottles per annum, this is Gimonnet's largest cuvée by some margin.

Description
Pierre Gimonnet Cuis 1er Cru Brut is a Blanc de Blancs champagne made exclusively from Chardonnay grapes. This cuvée stands out for its freshness, elegance and the purity of the traditional style of the Maison Pierre Gimonnet. Founded in the heart of the Côte des Blancs, this winery specialises in the production of fine, high-precision champagnes.
The vineyard is located in the Premier Cru de Cuis, a region renowned for its cold climate and chalky soils that bring a characteristic minerality to its wines. For this champagne, grapes from up to six different vintages are used: the base comes from the current year (74%), complemented by reserve wines from up to six previous vintages (26%). This complex and careful blending reflects the producer's ability to balance freshness and maturity.
Winemaking
The winemaking process for Pierre Gimonnet Cuis 1er Cru Brut begins with a manual harvest and fractional pressing to extract the best must. After cold static racking, alcoholic fermentation takes place in temperature-controlled steel tanks, followed by malolactic fermentation, which softens the wine's acidity. A particularity of the house is the preservation of the reserve wines in bottles on fine lees, a rare method in the region, which preserves the freshness and complexity. The final blend blends wines from different vintages, and after ageing in vats for 6 to 8 months, the wine is bottled for secondary fermentation for a minimum of 24 months. Finally, the wine is disgorged three months before shipping, with a dosage of 5.5 to 6 g/L (Brut).

On the palate, Pierre Gimonnet Cuis 1er Cru Brut is a vibrant wine with fine, well-integrated bubbles. Notes of citrus, dried fruits and subtle hints of pastries combine with a salivating freshness and creamy texture. Its balance between acidity and body makes it an ideal champagne both as an aperitif and as an accompaniment to a meal.
