Description
Ridge Cabernet Sauvignon Estate is a red wine made from 88% Cabernet Sauvignon, 11% Merlot and 1% Petit Verdot from the Monte Bello vineyards in the Santa Cruz Mountains, which gives it a rich and balanced blend.
Ridge Cabernet Sauvignon Estate is not only a reflection of its terroir and the year's climatic conditions, but also of the commitment and passion of those who make it. It is a wine that, while it can be enjoyed young, has the structure and potential to age and develop for many years to come.
Winemaking
To make Ridge Cabernet Sauvignon Estate, it all starts with the hand harvesting of estate grown grapes, which are then carefully destemmed and sorted. These grapes, all whole, are fermented using native yeasts with the skins over the next 9 days. The malolactic fermentation process begins in tanks and is completed in barrels, where the wine remains in contact with the lees for an additional ten weeks.
Ageing takes place in American oak barrels that have been air-dried. Of these barrels, 58% are new, 8% are one year old and 34% are two years old. The wine matures in these barrels for sixteen months, acquiring complexity and character.
Throughout the process, a minimum amount of sulphur is used. To reduce tannins, four egg whites are added per barrel. Finally, before bottling, a deep filtration is carried out. Following a philosophy of minimal intervention, these actions reflect the essence of the production of this exceptional wine.
Taste
Ridge Cabernet Sauvignon Estate has a purple colour with aromas of black cherry, plum, black tea, cedar and sweet toasted oak. On the palate, bramble fruit, vanilla and mint are evident, accompanied by well-coated tannins and a lingering finish. The structure and balance of the wine are exquisite, with a purity of cassis and a touch of green sage. It is also fresh and refined, with a smooth mouthfeel and soft tannins. Ripe blackcurrant flavours combine with coffee bean and chocolate cake nuances, offering a complex and pleasurable taste experience.
