The 2020 VO Cal is even sharper than the 2019 I tasted next to it, and it's low in alcohol (11.9%) and has very low pH (2.95) with notable acidity (7.4) grams. The élevage was slightly longer—14 months in a combination of different sizes of barrels and 800-liter tinaja. This vineyard is always harvested quite early, and that was the case this year; but the style of the vintage is for moderate alcohol and higher acidity. Yields were also a little higher, and the wine is superb, austere and vibrant, quite harmonious, with a piquant palate with a sparkling texture and a long and salty finish. It has to be the finest Cal. Unfortunately, this will be the last vintage of Cal, as the vineyard was sold. This should be quite long lived. 4,300 bottles produced. It was bottled in November 2021.

Description
Verónica Ortega CAL, is a white wine made from 100% Godello grapes by the Verónica Ortega winery in Valtuille de Abajo (León) D.O. Bierzo.
The grapes come from a small-grained Godello vineyard, planted in a plot more than 30 years old, located on an old limestone mine with calcareous soils, in San Juan de la Mata, in the Bierzo region. This type of soil is not frequent in the area.
Elaboration
The grapes are harvested by hand and placed in 15 kg crates. When the grapes arrive at the winery, they are destemmed and undergo a light maceration of one night and a gentle racking of the must.
Fermentation is carried out with indigenous yeasts in French oak barrels. The wine is aged for 12 months in 800-litre amphorae.
Taste
It is a wine with intoxicating fruity aromas on a mineral background. In the mouth it is tasty, sharp and austere. It is a surprising white wine, very Atlantic, with lively acidity, long length and a delicious salty finish.
