Comprar Ron
El ron es una bebida alcohólica producida a partir de la fermentación y posterior destilación del jugo de caña de azúcar o melaza. En nuestra selección, incluimos botellas producidas tanto en Cuba, como España, Perú y Francia.
Los factores más determinantes para su sabor específico son tanto el tipo de levadura utilizada en la fermentación, como el método de destilación empleado, las condiciones de envejecimiento al que es sometido y las mezclas escogidas.
El proceso de elaboración del ron
Una vez que las cañas de azúcar son cosechadas, éstas son transportadas a un molino para limpiarlas y molerlas en pequeños pedazos para extraer el jugo. Este jugo de caña, de color verdoso, se filtra para eliminar residuos y se clarifica se para eliminar los sólidos en suspensión, para después calentarse y pasarse por evaporadores para eliminar su exceso de agua.
Este líquido es después sometido a dos hervores, a veces tres, para condensar y formar una sustancia azucarada espesa y oscura. Para su fermentación, se utilizan levaduras que transforman el azúcar en alcohol etílico y dióxido de carbono.
En función del tiempo que se destine a la fermentación -puede ser de entre doce horas hasta doce días-, se obtendrá un ron más ligero o más espeso. Al final este proceso, se obtiene un mosto de un contenido alcohólico de entre el 5 y 9%.
El siguiente paso es la destilación, la cual permite eliminar residuos y separar el alcohol del agua. Esto se realiza mediante la evaporación a diferente ritmo y posterior condensación del alcohol. Aquí, la bebida alcanza hasta un 80% de contenido de alcohol, que es rebajado con agua.
Para la destilación, se pueden ser utilizados dos métodos: la destilación en alambique o la destilación continua en columnas, en función de cuan fuerte y puro se busque que sea el resultado.
El tiempo añejamiento también va a ser determinante para las características del ron. Cuanto más tiempo en barrica de madera, más taninos va a absorber, los cuales le aportan color y sabor. La porosidad de la madera también le imprime cambios oxidativos.
Los tipos de ron
Las particularidades en el proceso de elaboración del ron le brindarán sus características específicas. Existe una gran variedad de tipos de ron, entre los que pueden destacarse:
- Ron blanco: seco y ligero, se caracteriza por su falta de color (como mucho, puede tener tintes suaves de amarillo) gracias a un proceso de filtrado. Debe atravesar un envejecimiento corto -de entre tres meses y un año- en madera de roble o cerezo.
- Ron dorado: Su color ámbar se explica porque no es filtrado, y también por la tintura que le aporta la madera de las barricas donde es añejado durante un largo período de tiempo, que suele ser de cinco años. Durante este tiempo de añejamiento también se suele evaporar parte de su contenido alcohólico, con lo cual el resultado es más suave.
- Ron añejo: suele permanecer en barrica entre un año y cinco. Es el de consumo más popular en el mundo.
- Ron viejo: es aquel que cuyo añejamiento no baja de los tres años.
