La bodega Paolo Scavino es una histórica joya en la región de Barolo. Fue fundada en 1921 en Castiglione Falletto por Lorenzo Scavino y su hijo Paolo. La agricultura siempre ha sido una tradición y pasión familiar. Enrico Scavino, junto con sus hijas Enrica y Elisa, representantes de la cuarta generación, dirigen la finca familiar.
Enrico comenzó a trabajar a tiempo completo en la bodega en 1951 cuando tenía solo 10 años. Es un joven enólogo que heredó la pasión y devoción por la tierra a la que pertenece. A través de más de 60 años de experiencia, su enfoque ha sido invertir en importantes cru de Nebbiolo para mostrar la singularidad de cada terroir. Su trabajo está inspirado por el amor y respeto que tienen por su territorio, y buscan la pureza de expresión, complejidad y elegancia para sus vinos a partir de las tres uvas locales: Dolcetto, Barbera y Nebbiolo. Paolo Scavino posee 30 hectáreas íntegramente en la zona de Barolo y trabaja en 20 históricos crus de Barolo ubicados en Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno, Roddi y Monforte d’Alba. Desde el principio, la familia Scavino se ha distinguido por su meticuloso cuidado de los viñedos y su pasión por el terroir. Su creencia fundamental es la supremacía de la viticultura sobre la enología, por lo que el enfoque está en el cuidado de las viñas para cultivar uvas maduras y saludables. En la vinificación, buscan intervenciones mínimas e iguales para preservar las diversidades naturales y el terroir.

Paolo Scavino se centra en la elaboración de sus vinos y técnicas de vinificación, combinando la tradición y la innovación.
