La bodega Cinque Campi se encuentra ubicada en las primeras colinas a los pies del Appennino Reggiano. Esta bodega tiene una rica historia que se remonta a más de 200 años, donde los terrenos y viñedos han sido transmitidos de padre a hijo. Originalmente, la producción vinícola de la finca era consumida exclusivamente por la extensa familia. Sin embargo, a partir de 1980, la bodega adoptó el nombre de su parcela principal, "Cinque Campi".
Aunque inicialmente el vino se vendía en damajuanas a un pequeño grupo de personas en la localidad, fue en 2003 cuando se formalizó la gestión "bio", que ya se practicaba por tradición. A partir de ese momento, comenzaron el embotellado y etiquetado. En 2005, se inició un significativo proceso de recuperación y replantación de variedades autóctonas, lo que permitió diversificar la producción y obtener vinos de alta calidad y originalidad.Viñedos
Los viñedos de Cinque Campi están situados en tres parcelas distintas: la histórica "Cinquecampi", "Le Marcone" y las nuevas parcelas "Botteghe" y "La Bora Lunga". Estos viñedos se asientan sobre un terreno franco arcilloso compuesto por un 20% de arena, un 45% de limo y un 35% de arcilla. En estos suelos se cultivan variedades autóctonas como el Malbo Gentile, Spergola y el Lambrusco Grasparossa, así como otras variedades como Marzemino, Cabernet Sauvignon, Moscato y Carmenere. La producción varía entre 1,5 y 3 kilos por cepa, dependiendo de la variedad.
Filosofía
La filosofía de Cinque Campi se basa en la viticultura biológica. La bodega tiene la firme convicción de que el equilibrio natural no debe ser alterado o modificado. Cada ser vivo presente en las hojas, troncos y tierra es esencial para mantener el equilibrio natural del territorio. Esta filosofía se refleja en sus productos, y están convencidos de que este es el único método válido para producir vino.
El proceso de vinificación comienza en julio con la vendimia en verde, donde se eliminan los racimos en exceso. Desde finales de agosto hasta principios de octubre, los racimos restantes se vendimian a mano en pequeñas cajas. Pocas horas después de la cosecha, los racimos se prensan en bodega. Para los tintos, las uvas se maceran en tinas abiertas de roble y en depósitos de acero inoxidable, dependiendo del tipo de vino. Las maceraciones varían entre diez y treinta días, seguidas de un prensado suave. Los vinos blancos se dejan entre 3 y 5 días en las pieles y fermentan sin control de temperatura. Posteriormente, cada vino sigue un proceso de afinamiento diferente.
