La bodega Maximin Grünhaus se encuentra en una ubicación privilegiada, al pie de un acantilado empinado orientado al sur que se extiende a lo largo de la margen izquierda del río Ruwer, a aproximadamente 2 km de su unión con el Mosela, en el municipio de Mertesdorf. Los terrenos sobre los que se asienta han sido cultivados desde la época romana. En el año 966, existe la primera referencia documentada de la bodega cuando el Kaiser Otto I la regaló a la Abadía Benedictina de San Maximino de Trier.
Tras la secularización de Napoleón, la finca pasó a manos de Friedrich Freiherrn von Handel, y en 1882 fue adquirida por Carl Ferdinand Freiherr von Stumm-Halberg, quien la ofreció como dote al matrimonio de su hija con Conrad Von Schubert. Desde entonces, la bodega ha sido gestionada por la familia Von Schubert. Actualmente, desde 2017, la propiedad está en manos de Maximin Von Schubert, representante de la sexta generación de la familia.Viñedos
La bodega Maximin Grünhaus cuenta con tres pagos monopol: ABTSBERG, HERRENBERG y BRUDERBERG. El ABTSBERG, con 14 hectáreas, es el pago más renombrado, con pendientes de hasta el 75% y un terreno compuesto principalmente de pizarra azul del Devónico. Esta composición del suelo otorga a los vinos una marcada mineralidad y profundidad. Además del Riesling, en ABTSBERG también se cultiva el Spätburgunder (Pinot Noir). Por otro lado, el HERRENBERG, con 19 hectáreas, comparte muchas características con el ABTSBERG pero se diferencia por su terreno de pizarra roja. Finalmente, el BRUDERBERG, el más pequeño con solo una hectárea, está dominado por la misma pizarra azul del Devónico que el ABTSBERG.
Filosofía
La filosofía de la bodega se centra en abrazar la naturaleza. El cultivo en los viñedos de Maximin Grünhaus es de orientación natural, con el objetivo de cosechar uvas completamente maduras y saludables. Se promueve la salud de las uvas a través de intensos trabajos de follaje. Una vez cosechadas, las uvas son transportadas rápidamente al sótano de la bodega, donde, tras ser prensadas y clarificadas, se fermentan espontáneamente en barricas de roble o en pequeños tanques de acero inoxidable con levaduras autóctonas. Esta fermentación espontánea realza el carácter típico del Riesling de la región de Ruwer. Además, la bodega utiliza barricas hechas de madera de roble de sus propios bosques, lo que contribuye al carácter distintivo de sus vinos.
